DROP THE BEET

Beets and lemon have always been a match made in heaven—but if you haven’t tried them with some basil thrown in, you’re missing out. Beet juice is well-known for being nutrient-dense and packed with essential vitamins and minerals, and the olive oil assists with nutrient absorption. Beetroot has an earthy taste by its very nature, and I adore it with a subtle touch of sweet basil in this dreamy mocktail. The flavors are perfect for the cooler weather, but adding the optional soda water or kombucha adds a touch of effervescence and a summery vibe, so it can really be enjoyed any time.

SERVES 1

INGREDIENTS

3 oz (90 ml) beetroot juice

1 oz (30 ml) freshly squeezed lemon juice

6 fresh basil leaves, plus more for garnish

1 tsp maple syrup

½ tbsp (8 ml) olive oil

2 oz (60 ml) soda water (optional, for a bubbly touch)

Dehydrated lemon wheel, for garnish

METHOD

Combine the beetroot juice, lemon juice, basil, maple syrup and olive oil in a shaker with some ice. Shake for 15 seconds.

Fill a wine glass with ice, then strain the mixture in. Drink this as is, or add some soda water if you’d like some fizz. I personally prefer the fizz!

Garnish with some basil and a dehydrated lemon wheel.
